Lentil Soup
What You Need (serves 4)
- 1 litre vegetable stock (try low-salt stock cubes).
- 200g (8oz) red or yellow lentils.
- 1 leek (chopped).
- 2 medium carrots (grated or cut into small pieces).
- ¼ small turnip (grated or cut into small pieces).
- 1 onion (chopped).
- Black pepper – add to suit your taste.
How To Make It
- Bring the vegetable stock to the boil.
- Add the lentils and cook for 10 minutes, stirring occasionally.
- Add the vegetables.
- Bring back to the boil, simmer and cook for 30 minutes.
- Add the pepper, check seasoning. Serve with crusty bread.
