Roasted Red Peppers
Serve with nut roast and tomato and coriander sauce or as a vegetable with any festive roast.
What you need
- 4 red peppers
- 1-2 tbsp olive oil
How to make it
- Wash the red peppers and deseed.
- Cut lengthways into wide slices and place on a oven-proof tray.
- Drizzle on a little olive oil and roast in a hot oven 220°C/ 425°F/Gas mark 7 until they just start to burn.
- Serve.
